Moa Foodtech Converts Food Waste with AI-Powered Fermentation
Spain-based startup Moa Foodtech is transforming food by-products into functional ingredients such as protein and vitamins through an AI-powered fermentation process.
Founded in 2021 and based in Spain, Moa Foodtech utilizes AI-powered fermentation methods to upcycle food industry by-products. The startup transforms waste rich in starch, fiber, and sugar into valuable components like protein and vitamins via microorganisms.
Foundation and Operating Principles
Headquartered in Noáin, Spain, Moa Foodtech was established in 2021. The startup was founded by individuals including José María Elorza, Bosco Emparanza, and Susana Sánchez-Gómez.
Biochemists and bioinformaticians within the company feed microorganisms selected with the help of artificial intelligence into fermentation tanks to convert food industry waste.
Artificial Intelligence and Microorganism Processes
The AI tool predicts which microorganism can break down a specific industrial by-product and also works in reverse to suggest inputs for a target component.
Scientists collect the highest-performing microbes from food production facilities and the mountains surrounding Pamplona.
Funding and Key Partnerships
The startup has secured 12 million euros in financing from investors such as Icos Capital, Swanlaab Venture Factory, the European Innovation Council Fund, and Viscofan.
Additionally, to increase its production capacity, the company announced a new financing round worth 3.3 million euros in September and has forged partnerships with global giants like Barilla.
New Product Development Studies
Moa Foodtech is carrying out pilot production of a high-protein, high-fiber emulsifier capable of replacing eggs in baked goods and sauces.
The startup has also expanded beyond human food by launching a yeast-derived ingredient used in commercial pet food.
